Mirano’s 鶏肉の二食漬け recipe was originally from her mom, she made an additional flavour with marmalade, to test her own imagination. 鶏肉の二食漬け (toriniku no nishokuduke) literally means two colour marinated chicken, Mirano first had it as her elementary school lunch, she liked it so much that she requested her mom to make it, later becoming a regular dish on the dining table back home.
Chicken thigh was marinated in a mixture of soy sauce, mirin, garlic, ginger, onion and a few other ingredients, then grilled, or in this case, broiled in an electric oven. Mirano garnished the dish with a bit of scallion, as she thought it needed some greenery. The outcome was not as crisp as Mirano’s mom would’ve made. The dish traditionally may be paired with other food, but for this particular evening, it was one of many random other dishes of a gathering with friends.
